LEFTOVER BREAKFAST IDEA

For 4 people
Ingredients

                 200g spaghetti or some other kind of pasta
                 7 eggs
                 4 tablespoons finely chopped chives
                 1 tsp chilli peppers
                 2 tablespoons extra virgin olive oil
                 Salt
                 800g tomatoes
                 400g cucumber
                 4 tablespoons of cottage cheese
                 Chives for decoration


Procedure

I usually do this when I have pasta leftover from lunch or dinner regardless sauce I used in that meal. But you can always cook pasta just for this recipe.

Stir eggs; add finely chopped chives, chilli peppers and salt. Add pasta to this mixture and stir. Heat olive oil in a pan and add the mixture. Let it get golden brown colour on both sides.


 Serve it with a tomato and cucumber salad and garnish with cottage cheese and chives.
