VEGETABLE NOODLES WITH SPICY AVOCADO SAUCE

For 2 people
Ingredients:

                 300g butternut pumpkin
                 100g pickled red pepper
                 200g avocado
                 50g tomatoes
                 50g onionon
                 2 tablespoons lemon juice
                 1 tablespoon extra virgin olive oil
                 Salt, chilli peppers


Procedure:


Cut butternut squash into spaghetti. You can do it with special kind of knife or spiral vegetable slicer. Slightly fry them on olive oil. It is important they stay crispy. Put other ingredients in a blender and blend it until you get smooth texture. Serve it with pickled red peppers and chili peppers.
