This recipe is perfect base recipe for all kind of special
diets. It is easy to make and easily transformed in to vegan, grain free, paleo
or gluten free diet. If you want to cook vegan meal add pasta or rice. If you are on
paleo, grain free or gluten free just add some cooked or baked meat.
For 4 to 6 people
Ingredients:
300g onions
450g bell pepper
350g zucchini
900g peeled tomatoes
2 tablespoons extra virgin olive oil
1 teaspoon turmeric
1 teaspoon ground chilli pepper
Salt and pepper
Instructions:
Wash and clean the vegetables. Slice up
peppers, onions and zucchinis into thin slices and dice up tomatoes.
Put extra virgin olive oil in the pot, add turmeric.
Heat it up, add onions and 1 dcL of water and simmer for about 5 minutes. Add peppers
and tomatoes and season it with ground chilli peppers, salt and pepper
according to taste. Add 5 dcL of water and let it boil, reduce the heat to the
lowest. After 15 minutes add sliced zucchinis and cook for another 5
minutes.
Serving:
You can serve it with bread, pasta, polenta,
rice or meat if you are on low carb diet.
