Ingredients:
150g
chicken breast
300g
zucchini
100g
onions
50g
wild asparagus
1dcL
coconut milk
1dcL
water
1
teaspoon extra virgin coconut oil
Salt,
pepper and turmeric
Instructions:
Wash and prepare your vegetables. Cut onion and
zucchinis into small cubes. Fry onions and turmeric on extra virgin coconut oil.
It is essential to add 2-3 tablespoon of water every minute or two. When onions
starts to get soften add asparagus broken into smaller pieces.
Cut chicken breast into cubes and add them to
pot. Simmer for 10 minutes and then add zucchinis and coconut milk. Season to
taste and cook for another 5-10 minutes, depending how much will be needed to
make a thick sauce.
