For 6 to 8 people
Ingredients
1.5kg chicken
200g onions
5 cloves garlic
500g bell pepper
350g green beans
1kg tomatoes
50g blueberries
4 prunes
1dcl red wine
3dcl of water
2 tablespoons extra virgin olive oil
1 tsp chilli pepper
Salt, pepper
400g rice
Procedure
Slice onion and garlic into small cubes. Fry onion and
garlic in olive oil until they get golden brown. Cut peppers into slices, and tomatoes
in dices, then add them to the pot, after that add vegetables, chicken,
blueberries and plums. Add water, wine and spice.
Cook on the highest heat until it starts to boil. Reduce to
a low heat and cook for an hour. The last 15 minutes of cooking, add green
beans. While chicken and vegetables are cooking prepare rice.
