COLOURFUL PALEO RISOTTO

For 2 or 3 people


Ingredients:

                150g tomato
                150g peas
                150g carrot
                200g canned tuna
1kg cauliflower
                Freshly squeezed juice from half of the lime
                1 tablespoon of extra virgin olive oil
                Salt, pepper and hot pepper


Instruction:

Put water, cubed carrots and peas in pot. Let it cook for 10 minutes and then drain it.

Chop cauliflower into smaller pieces, steam it and let it cool down. Put in multipractic food processor until you get rice like structure.

Cut tomatoes into cubes and mix it with tuna, cooked peas and carrot. Season it with extra virgin olive oil, lime juice, salt, pepper and hot pepper. Mix the vegetables with cauliflower “rice”.
