RAW CASSEROLE WITH WILD GARLIC CRACKERS

Ingredients
Raw wild garlic crackers
50 g green lettuce
200g tahini sauce
1 carrot
100g celery
50 g radishes 
10 cleaned marinated anchovies
2 teaspoons extra virgin olive oil



Procedure

Chop carrots and celery, cut them in the form of spaghetti. You can do it with special kind of knife or spiral vegetable slicer. Slice up the radishes and tear green lettuce into smaller pieces.


 Put tahini sauce over crackers, add green lettuce, a teaspoon of olive oil and anchovies. Put another cracker, and then add tahini sauce, carrots and celery, radishes and anchovies. Put the last cracker on top of everything; garnish with a tahini sauce and radishes.


Serving

Serve it with a cabbage salad in a ginger and lemon sauce.

You need a small piece of ginger (1cm x 1cm), a spoonful of honey, 3 tablespoons of soy sauce and lemon juice from one lemon. Put everything in blender. Then add extra virgin olive oil, little by little until the sauce gets a golden yellow colour.
