MEXICAN LENTIL SALAD

For 6 people
Ingredients
        400g of pasta
        500g brown lentils
                600g of corn
                600g bell pepper
                300g onions
                200g tomatoes
                3 tablespoons hummus
                3 tablespoons extra virgin olive oil
                Salt, chilli pepper

Procedure
Soak lentils soak overnight. I use a pressure cooker, if you have one cook for 20 minutes, if not cook about an hour and then drain it. Cook pasta separately. Cut peppers and onions into slices. Cut tomatoes into cubes. Mix hummus and olive oil with spices. Mix all the ingredients together and let the salad to cool down before serving.
