In Croatia is traditional to eat filled peppers. The filling is usually made with minced meat and rice or with potato and cream mixture. While I was eating only raw I wanted to recreate some traditional comfort food. I present you filled red peppers with spicy walnut filling and raw zucchini spaghetti.
For 4 people
Ingredients:
To fill the peppers:
300g
ground walnuts
200g
tomatoes
200g
red peppers
100g
onions
3
cloves garlic
Salt,
chilli pepper, pepper and oregano

Spaghetti:
1,200 g zucchini
Freshly squeezed lemon juice
1 tablespoon extra virgin olive oil
Salt
Procedure:
Clean red peppers in
way that they stay whole. Place the rest of the ingredients in a food processor
until you get compact mixture. Fill the peppers with mixture.
Wash zucchinis and cut them in the form of
spaghetti. You can do it with special kind of knife or spiral vegetable slicer.
Spice up spaghetti with salt, lemon juice and extra virgin olive oil. Let it
rest for at least 10 minutes (the longer it stands zucchinis will drop more
water but if you like it more crunchy just let it rest for 10 minutes and then
drain them).
