BEEF TRIPE

For 4 to 6 people
Ingredients
                 600g beef tripe
                 400g pork
                 400g carrots
                 400g bell pepper
                 200g onions
                 4 cloves garlic
                 2 chilli peppers
                 4 prunes
                 Leaves of 3 Kohlrabis
                 The leaves of carrots
                 2 cans peeled tomatoes (400g)
                 1.5 L of water
                 2 tablespoons of lard
                 Salt, pepper

Procedure


Cut pork into cubes. Put it in pressure cooker add the tripe, roughly chopped carrots and peppers, prunes, leaves of kohlrabi and carrots, chilli peppers. Cook in a pressure cooker for an hour. Use other pot to fry onions and garlic on lard. Add pre-cooked mixture without leaves in that pot and canned peeled tomatoes, season according to taste and let it boil for 5 minutes.
