ANCHOVIES WITH GREEN BEANS AND BUTTON MUSHROOMS

For 4 to 6 people
Ingredients

                1 kg anchovies
                100g sesame seeds 
                400g button mushrooms
                500g green beans
                3 cloves garlic
                Extra virgin olive oil
                Salt, chilli peppers
               
                Sauce
                                2 bunches of parsley
                                6 cloves garlic
                                1 dcl extra virgin olive oil
                                ½ tsp salt


Procedure

Grind sesame seeds season them with salt, if you want richer taste; you can add spices like rosemary and minced garlic. Clean anchovies and roll them in a mixture of sesame and salt (and spices if you like them). Fry the anchovies in olive oil.

Put mushrooms in a grill pan and bake them for about 10 minutes. Cook green beans cook so they stay crisp, cool them down and season them with extra virgin olive oil, finely chopped garlic, salt and chilli peppers.


For making parsley and garlic sauce you need to finely chop parsley and garlic, add extra virgin olive oil and season it with salt according to taste.
